Although Sparkling Wines are enjoyable on their own, they are remarkably good with meals and hors d’overs. Fresh, plump berries and shrimp cocktail are classic pairings but Sparkling Wines are a lot more versatile than that. Try these exotic and traditional pairings:

Cheese: Pair Sparkling Wine with Cheese. Try double aged, Parmigiano-Reggiano with DRY or JUICY BERRY Sparkling Wine. This dry, strong cheese offers a bold contrast to the subtle hint of sweetness in JUICY BERRY Sparkling Wine or compliments HW crisp, DRY Sparkling Wine. Brie cheese baked in a canopy of filo/biscuit crust that is drizzled with brown-sugared-buttered walnuts or sliced almonds and topped with raspberry preserves and JUICY BERRY or Dry Sparkling Wine is absolutely lovely. Or keep it simple with brie cheese served room temperature on thinly sliced baguette or crackers and one of our Sparkling Wines.

Sushi & Seafood: Today sushi hors d’overs are a contemporary choice to pair with Sparkling Wine. Juicy Berry Sparkling Wine offers delicate berry nuances that go very well with the exotic flavors of sushi and spicy wasabi. A platter of cold shrimp served with a buttery garlic sauce or a tangy cocktail sauce is classic. An  alternative is raw oysters on the half shell with a savory blend of horse-radish-cocktail sauce to pair with the subtle fruit nuances in Juicy Berry Sparkling Wine. For years, Sparkling Wine and caviar were paired together. Today sushi is a contemporary alternative to pair with one of our Sparkling Wines.

Casual Foods & BBQ: Now bringing Sparkling Wines to a BBQ or picnic is the new casual-chic. Sparkling Wine in JUICY BERRY or DRY, is a welcomed potluck “dish” to share with family and friends.

Entrees: Sparkling Wine is an excellent pairing with meat selections of all kinds, beef, chicken, fish and pork as well as fish or seasoned vegetables. Try classics like Roasted Turkey breast with a savory sage béarnaise sauce and tossed red potatoes with parsley, garlic-butter served with Sparkling Wine in JUICY BERRY or DRY, Another idea is pan-seared sole topped with light cream sauce and capers and served with ginger-glaze carrots and a side of jasmine rice pilaf – and pair it with Sparkling Wine JUICY BERRY or DRY.

Salads: Chicken salad tossed with fresh grapes, chopped apples, walnuts and mixed with half mayonnaise and half sour cream is a wonderful pairing for Sparkling Wine JUICY BERRY or DRY. Try an Italian salad of thick sliced tomatoes, layered with fresh buffalo mozzarella cheese and a savory green basil leaf drizzled with Italian dressing and topped with ground pepper served with Sparkling Wine JUICY BERRY or DRY. A South of the border salad with tossed lettuce greens, sliced black olives, drained kernel corn, chopped cilantro and onions, then encircle the plate with tortilla chips and garnish with a dab of sour cream or shredded cheddar and serve with Sparkling Wine; JUICY BERRY or DRY is excellent.

Cultural Foods: Today it is innovative to pair Sparkling Wine with Cultural flavors of Chinese/Asian, French, Italian, and more. Try JUICY BERRY or DRY Sparkling Wine with a spicy Chinese Entrée, served with seasoned noodles or steamed rice, remember to add the chopsticks at least for garnish, and serve mixed greens topped with sesame seeds and a ginger dressing as a side dish in a martini glass. French Crepes for dinner or dessert is an excellent way to enjoy JUICY BERRY or DRY Sparkling Wine. When we think of Italian foods with savory tomato base we think of hearty red wines, yet what about a fettuccini with alfredo sauce, or a whimsical angel hair pasta tossed with lightly sautéed spring vegetables in butter, garlic, caper sauce, pair these with one of our Sparkling Wines for added pizzazz.

Fruit: Sparkling Wine and fruit go hand in hand. JUICY BERRY, the Sparkling Wine people love, is wonderful with fresh fruits. The subtle JUICY BERRY flavor and lively pink color is elegant with any fruit combination. Melons balls or squares can be skewered then marinated in Sparkling Wine or marinade a melon-skewer right inside a tall wine glass flute. Plump blackberries, raspberries, blueberries and strawberries tossed in a bowl, complement flavors in JUICY BERRY Sparkling Wine or offer the DRY classic style Sparkling Wine as a contrast to the sweet fruit. What fruit is in season –tangy apricots, fresh pears, dark bing cherries? When you don’t have fruit fresh try mandarin oranges from a can with a few fresh mint leaves. Fresh grapes on the stem are always a welcomed complement to our Sparkling Wines.

DessertsLet your imagination be your guide! Bananas flambé and cherries Jubilee over vanilla ice cream and served with our Sparkling Wines are both such an elegant desserts and the fire adds sizzling attention! An array of European cheeses arranged on a silver or crystal serving tray complimented with pecans halves is always classy served with Sparkling Wine JUICY BERRY or DRY. Crème brulé topped with fresh raspberries or green tea crème brulé is an excellent complement with JUICY BERRY Sparkling Wine. Another favorite is strawberry cheesecake drizzled with melted chocolate and served with our Sparkling Wines.

Chocolate – Although many people would consider chocolate a dessert, to so many others, chocolate is in a category all its own. So we are treating chocolate separately! Try dark chocolate covered long stem strawberries with our Sparkling Wines and for more pizzazz serve tuxedo-style chocolate-covered strawberries. Thick, rich, dark chocolate mousse topped with raspberry gelée or swirled with espresso is sensuous with DRY or JUICY BERRY Sparkling Wine. Even simple chocolate topped wafers on a plate that is red or crystal can hit the mark. Some people say that there is nothing quite so decadent as chocolate with Sparkling Wine. And if that is the case, then it is just a matter of taste if you prefer: creamy milk chocolate truffles, or dark rich chocolate, or perhaps even a velvety white chocolate, paired with our DRY or JUICY BERRY Sparkling Wine.


 

AUGUST

Hot summer days and cool nights continue in the vineyard. By the end of this month, Winemakers, Vineyard Managers and Enologist will measure the brix in the grapes almost daily, to evaluate the best time to begin the picking the fruit from the vines. Sugar content in grapes is called brix. Everything about wine is the best. In late August, early September it is time to choose, What is the best time to pick the grapes. The quality of the fruit in the vineyard becomes the richness and complexity of wine in your glass. Grape picking is done either by hand or mechanically. Some winemakers prefer grapes to be picked before sunrise to limit the photosynthesis by the sun of the grape sugars. Harvest season is also called crush season, because when the grapes are picked they are then crushed and the fermentation begins. Generally red wines are fermented with the skins to add rich red color to the future wine.
