Wine Entertaining

Whether it is a home or corporate event, whether it is formal or relaxed,
Hidden Wineries has several suggests to make your wine-entertaining more enjoyable:

  • The first guideline is to relax and have fun!
  • Wine is about enjoying with friends and family, serve it as an enhancement to your lifestyle.
  • The best wines to serve, are the wines that you enjoy.
  • Chill your wines before serving, generally:
    • Sparkling Wines          chill to approx 42-45 degrees
    • White wines                 chill to approx 48-52 degrees
    • Red Wines                   store at approx 60-64 degrees, and serve at tepid room temperature
  • Stock up on ice. You may want it for holding bottles of white wines and Sparkling Wines
  • Generally have twice as many glasses on hand as guests – consider glass-charms so people don’t loose their glasses. An inexpensive wine charm is ribbon –in different colors.
  • Estimate if you are serving wine, that each guest will drink 1-2 glasses of wine the first hour and one glass the second hour. If the party is longer than that, we recommend planning one additional glass of wine, per guest, per hour.
  • Remember, always provide water when serving wines.
  • Be aware of glass styles:
    • Tall thin flutes Sparkling Wine
    • Round, blub-like glasses                     Red Wine
    • Tulip or pear shaped glasses             White Wine
    • Short, small vessel glasses                 Port or Sherry
    • Plastic tumblers                                   for casual or outdoor wine events is acceptable
  • There are approximately 4 to 5 glasses of wine per bottle
  • Don't be afraid to try new wines, or to stay with trusted favorites
  • Food & Wine – your food choices and serving style depends on your party type: a sit down dinner, buffet style hors d’overs, BBQ etc., but the old rules of white wine with fish and chicken and red wine with meat has become obsolete.
  • Generally drinking whites before reds is still our recommendation, and always drink responsibly.

AUGUST

Hot summer days and cool nights continue in the vineyard. By the end of this month, Winemakers, Vineyard Managers and Enologist will measure the brix in the grapes almost daily, to evaluate the best time to begin the picking the fruit from the vines. Sugar content in grapes is called brix. Everything about wine is the best. In late August, early September it is time to choose, What is the best time to pick the grapes. The quality of the fruit in the vineyard becomes the richness and complexity of wine in your glass. Grape picking is done either by hand or mechanically. Some winemakers prefer grapes to be picked before sunrise to limit the photosynthesis by the sun of the grape sugars. Harvest season is also called crush season, because when the grapes are picked they are then crushed and the fermentation begins. Generally red wines are fermented with the skins to add rich red color to the future wine.
